The Enchirito That Grandma Asked For Twice

Some recipes are measured in cups and teaspoons. This one is measured in memory. When your 92-year-old grandmother takes a bite, closes her eyes, and says it’s the best version she’s ever had—not once, but twice—you write it down. You guard it with your life. And you never, ever change a thing.

Serves: 4-6 (or one very happy Grandma)

Ingredients:

  • 1 lb ground beef

  • 1 can (16 oz) refried beans

  • 1 packet taco seasoning

  • ¼ cup water

  • 6 large flour tortillas (burrito-size)

  • 1 can (10 oz) red enchilada sauce

  • 1 ½ cups shredded sharp cheddar cheese

  • ½ cup shredded Monterey Jack cheese

For Serving (The Grand Finale):

  • A dollop of cool sour cream

  • A sprinkle of crisp, chopped onions

  • A few slices of black olives

  • Extra sauce, always extra sauce
