These open-faced sandwiches feature crunchy garlic toast topped with juicy tomatoes, rich provolone, and nutty Parmesan, all broiled to golden perfection. They’re a simple yet impressive lunch or light dinner.

Ingredients

  • 4 large slices sourdough bread or Texas toast, cut in half

  • 4 tbsp (½ stick) butter, softened at room temperature

  • 1-2 cloves garlic, pressed or finely minced

  • 8 large slices heirloom or Beefsteak tomato (from 2-4 tomatoes)

  • 2 tsp olive oil

  • 1 tsp balsamic vinegar

  • Salt and freshly ground black pepper, to taste

  • 8 slices smoked provolone cheese

  • ½ cup shaved Parmesan cheese (about 2 oz)

  • Optional garnish: Fresh basil, thyme, or parsley leaves
