For the Honey Dijon Glaze:

3 tablespoons honey

2 tablespoons Dijon mustard

1 tablespoon apple cider vinegar

Preheat and Prep: Preheat your oven to 400°F (200°C). Pat the sea bass fillets completely dry with a paper towel. This is the secret to a perfect sear! Season both sides generously with salt and pepper.

Sear the Fish: Heat the olive oil in a large, oven-safe skillet over medium-high heat. Once the oil is shimmering, carefully place the fillets in the pan. Sear, without moving them, for 3-4 minutes, until a deep golden-brown crust forms.
