Classic Tomato, Cucumber, and Onion Salad

This salad is incredibly easy to make, requires no cooking, and is the perfect side dish for grilled meats, sandwiches, or a light lunch on its own.

Ingredients:

For the Salad:

  • 2 large tomatoes, chopped into bite-sized pieces

  • 1 large cucumber, chopped into half-moons or chunks

  • ½ medium red onion, thinly sliced

  • 2 tablespoons fresh chopped parsley or dill (optional, but highly recommended)

For the Dressing:

  • 3 tablespoons extra virgin olive oil

  • 1 tablespoon red wine vinegar (or lemon juice)

  • ½ teaspoon salt (or to taste)

  • ¼ teaspoon black pepper (or to taste)

  • ½ teaspoon dried oregano (optional)
