🥔 Crispy Cheesy Broccoli Potato Bake Recipe

Ingredients:

  • 2 medium cooked potatoes (baked, roasted, or even boiled)

  • 1 cup chopped broccoli (fresh or thawed from frozen)

  • 1/2 cup shredded cheese (cheddar, mozzarella, pepper jack — whatever you’ve got)

  • 1/4 cup sour cream or plain yogurt

  • 2 tbsp milk or cream

  • 1 egg

  • 1/2 tsp garlic powder

  • Salt & pepper to taste

  • Breadcrumbs or crushed crackers for topping

  • Optional: chopped green onions, leftover bacon bits, herbs


Instructions:

  1. Preheat the oven to 375°F (190°C) and lightly grease a small baking dish or ramekins.

  2. Mash the potatoes in a large bowl. If they have skin on, even better — rustic texture!

  3. Add the broccoli (lightly steamed or sautéed if raw) and mix in the shredded cheese, sour cream, milk, egg, garlic powder, salt, and pepper. Stir until combined.
