3. Prepare the Tomato Shells: Carefully slice the top off each tomato. Using a spoon, scoop out the inner pulp and seeds to create a hollow shell for the filling.

4. Stuff and Top: Spoon the beef and vegetable filling into each tomato shell, dividing it evenly. Generously top each one with the shredded cheddar cheese.

5. Bake to Perfection: Place the stuffed tomatoes in a baking dish and bake for 15 minutes in the preheated oven, or until the cheese is melted and bubbly and the tomatoes are tender.
