1. Make the Biscuits
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment.
- In a large bowl, whisk flour, baking powder, sugar, and salt.
- Cut in cold butter until mixture resembles coarse crumbs.
- Stir in milk just until dough forms.
- Turn dough onto a floured surface, knead 2â3 times, and roll to ½-inch thickness.
- In a skillet over medium heat, cook sausage until browned, breaking it into crumbles.
- Season with pepper, garlic powder, and cayenne (if using). Drain and let cool slightly.
3. Assemble the Biscuits
- Cut dough into rounds using a biscuit cutter or glass.
- Place a spoonful of sausage in the center of each round.
- Fold dough over and pinch to seal, forming small filled biscuits.
- Place seam-side down on baking sheet. Brush tops with beaten egg.
4. Bake
- Bake 12â15 minutes, until golden brown.
- Let cool slightly before serving.
