Southern Fried Tuna Patties

Instructions:

  1. In a medium bowl, flake the drained tuna with a fork. Add the beaten egg, chopped onion, flour, cornmeal, mayonnaise, salt, and pepper. Mix until well combined.

  2. Shape the mixture into four evenly-sized patties.

  3. Heat about 1 inch of oil in a skillet over medium heat. Once the oil is hot and shimmering (a breadcrumb dropped in should sizzle), carefully add the patties.

  4. Fry for 3-4 minutes per side, until golden brown and crispy.

  5. Transfer the patties to a plate lined with paper towels to drain any excess oil. Serve warm.
