1. Make the Pancake Batter:
In a large mixing bowl, whisk together the flour, baking powder, and salt. Create a well in the center and crack in the eggs. Begin whisking, gradually pouring in the milk until a smooth batter forms and no lumps remain. Finally, whisk in the melted butter until fully incorporated. Let the batter rest for 5-10 minutes.
2. Cook the Pancakes:
Heat a non-stick skillet or frying pan over medium heat and add a small knob of butter. Once the butter is melted and sizzling, pour in a ladleful of batter to form a pancake about 6 inches (15cm) in diameter. Cook for 2-3 minutes, until bubbles form on the surface and the edges look set.
3. Add the Filling and Finish:
Flip the pancake. Immediately place a slice of ham and a generous sprinkle of grated cheese on one half of the pancake. Let it cook for another minute, or until the cheese begins to melt. You can either fold the pancake in half over the filling or top it with a second freshly cooked pancake.
4. Serve:
Transfer the filled pancake to a plate and keep warm. Repeat the process with the remaining batter and filling. Serve immediately while hot and the cheese is deliciously melted. Enjoy with a fresh green salad or your favorite dipping sauce.
