Pulse Until Smooth: Pulse the mixture several times until the ingredients begin to combine. Scrape down the sides of the bowl with a spatula.

Adjust Consistency: With the processor running, slowly add a splash of milk (about 1 tablespoon) through the feed tube. Process until the dip is completely smooth and creamy. For a thinner dip, add the remaining tablespoon of milk.

Incorporate Bacon: Add most of the bacon bits to the food processor and pulse just 2-3 times to incorporate, leaving some texture. Alternatively, you can stir them in by hand for more defined bits.

Chill: Transfer the dip to a serving bowl. Cover and refrigerate for at least 1 hour to allow the flavors to meld.

Serve and Garnish: Before serving, stir gently. Garnish with the remaining bacon bits and a sprinkle of fresh chives. Serve with crackers, pretzels, vegetable sticks, or sliced baguette.
Chef’s Tip: For the best flavor, make this dip a few hours ahead of time. The chilling time allows the dried onion to rehydrate and the flavors to fully develop.
