Pumpkin Spice Crumb Cake

Make the Crumb Topping
- Preheat oven to 350°F (175°C). Grease a 9×9 or 9×13 pan.
- Mix flour, brown sugar, cinnamon, nutmeg, and salt.
- Cut in butter until large crumbs form. Set aside.
- Whisk dry ingredients in one bowl.
- In another bowl, mix pumpkin, oil, and sugar.
- Add eggs one at a time, then vanilla.
- Alternate adding dry ingredients and buttermilk, beginning and ending with dry.
- Pour batter into pan and top with crumb mixture, pressing gently.
Bake
- Bake 30–35 minutes (or 20–25 for 9×13) until a toothpick comes out with moist crumbs.
- Cool slightly before glazing.
Make the Glaze
- Whisk powdered sugar, milk, and vanilla until smooth.
- Drizzle over warm cake and let set before slicing.
