Instructions

  1. Preheat and Prep: Preheat your oven to 350°F (175°C). Lightly coat a standard loaf pan with nonstick spray.

  2. Sauté Vegetables: In a skillet over medium heat, warm a drizzle of olive oil. Add the chopped onion and bell pepper and cook until softened and fragrant, about 5-7 minutes. Remove from heat and let cool slightly.

  3. Combine Meatloaf Mixture: In a large bowl, add the ground meat, breadcrumbs, egg, Worcestershire sauce, garlic powder, salt, and pepper. Add the slightly cooled sautéed vegetables. Using your hands or a fork, mix gently until all ingredients are just combined. Avoid overmixing.

  4. Assemble the Layers:

    • Transfer half of the meat mixture into the prepared loaf pan. Press it down firmly and evenly to create a solid base.

    • Arrange 3 slices of provolone cheese over the meat, covering the surface.

    • Carefully spread the remaining meat mixture over the cheese, sealing the edges to encase the cheese layer completely.

  5. Add the Final Topping: Lay the remaining 3 slices of provolone cheese on top of the meatloaf.

  6. Bake: Place the loaf pan in the preheated oven and bake for 45-60 minutes, or until the internal temperature reaches 160°F (71°C) and the top is golden brown.

  7. Rest and Serve: Remove the meatloaf from the oven and let it rest in the pan for 5-10 minutes. This allows the juices to settle and makes slicing easier. Slice and serve warm with your favorite sides.
