Preheat and Prep: Preheat your oven to 350°F (175°C). Lightly coat a standard loaf pan with nonstick spray.
-
Sauté Vegetables: In a skillet over medium heat, warm a drizzle of olive oil. Add the chopped onion and bell pepper and cook until softened and fragrant, about 5-7 minutes. Remove from heat and let cool slightly.
-
Combine Meatloaf Mixture: In a large bowl, add the ground meat, breadcrumbs, egg, Worcestershire sauce, garlic powder, salt, and pepper. Add the slightly cooled sautéed vegetables. Using your hands or a fork, mix gently until all ingredients are just combined. Avoid overmixing.
-
Assemble the Layers:
-
Transfer half of the meat mixture into the prepared loaf pan. Press it down firmly and evenly to create a solid base.
-
Arrange 3 slices of provolone cheese over the meat, covering the surface.
-
Carefully spread the remaining meat mixture over the cheese, sealing the edges to encase the cheese layer completely.
-
-
Add the Final Topping: Lay the remaining 3 slices of provolone cheese on top of the meatloaf.
-
Bake: Place the loaf pan in the preheated oven and bake for 45-60 minutes, or until the internal temperature reaches 160°F (71°C) and the top is golden brown.
Chef’s Tip: For an extra flavor boost, sprinkle a little dried parsley or oregano over the cheese topping before baking.
