- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a bowl, toss peach slices with sugar, cinnamon, flour, and lemon juice until coated.
- Roll out puff pastry on a floured surface and spread the peach mixture in the center, leaving a 1-inch border.
- Fold pastry edges over the peaches, creating a loose, rustic galette shape.
- Brush the pastry with beaten egg and dot the peaches with melted butter.
- Bake for 30–35 minutes, until the crust is golden and the filling is bubbling.
- Let cool 5 minutes, then slice and serve warm.
