Passion fruit cake

Preparation

1. Make the Cake Batter:

  • Preheat your oven to 180°C (350°F). Grease and flour a 22 cm (9-inch) round cake pan.

  • In a blender, combine the eggs, sugar, oil, and 250 ml (1 cup) of passion fruit concentrate. Blend on medium speed for about 2 minutes, until the mixture is smooth and well combined.

  • Pour the blended mixture into a large mixing bowl. Sift in the flour and baking powder to avoid lumps. Using a spatula or whisk, gently fold the dry ingredients into the wet ingredients just until no streaks of flour remain. Be careful not to overmix.

2. Bake the Cake:

  • Pour the batter into the prepared cake pan and smooth the top.

  • Bake for 35-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.

  • Let the cake cool in the pan for 10-15 minutes before turning it out onto a wire rack to cool completely.

3. Prepare the Glaze:

  • While the cake is cooling, make the glaze. In a medium bowl, whisk together the condensed milk and the remaining 70 ml (⅓ cup) of passion fruit concentrate until you have a smooth, creamy consistency.

  • Cover the bowl and refrigerate the glaze for at least 10 minutes to allow it to thicken slightly.

4. Assemble the Cake:

  • Once the cake is completely cool, pour the chilled glaze over the top, allowing it to drip down the sides.

  • Slice, serve, and enjoy!
