Orange and Cranberry Bread with Simple Glaze

Use Those Seasonal Cranberries – Cranberries are only in the stores for a short time! You can freeze the extras while they’re fresh and in season to make this delicious bread year-round.
The sweet glaze makes it even more delicious: the sweet glaze is rich in orange flavor and makes this loaf truly special.
For the Bread:
1 1/2 cups + 1 tablespoon all-purpose flour, divided
2 teaspoons baking powder
1/2 teaspoon kosher salt
1 cup full-fat yogurt
1 cup sugar
3 large eggs
2 teaspoons grated orange zest
1/2 teaspoon pure vanilla extract
1/2 cup vegetable oil
1 1/2 cups fresh or frozen cranberries, thawed and rinsed
For the Orange Syrup:
1/3 cup freshly squeezed orange juice
1/3 cup sugar
For the Orange Glaze:
1 cup powdered sugar, sifted
2 to 3 tablespoons fresh orange juice
How to Make Orange Cranberry Bread with Simple Glaze
Preheat oven to 350 degrees F. Grease the bottom and sides of a 9 x 5-inch baking pan; dust with flour, shaking out any excess.
In a medium bowl, sift together the flour, baking powder, and salt; set aside.
In a large bowl, whisk together the yogurt, sugar, eggs, orange zest, vanilla, and oil. Slowly fold the dry ingredients into the wet ingredients. In a separate bowl, toss the cranberries with the remaining tablespoon of flour and very gently fold them into the batter.
