Old South Coco-Cola Pork Loin

This incredible pork loin roast marinates overnight for maximum flavor, then roasts to perfection with a sweet, tangy, and caramelized Coca-Cola glaze. The result is a crazy-delicious, tender, and impressive main course.

Ingredients

For the Marinade & Pork:

  • 1 (3-5 lb) pork loin roast

  • 1 cup Coca-Cola

  • 1/4 cup soy sauce

  • 1/3 cup ketchup

  • 3 Tbsp vegetable oil

  • 2 Tbsp Dijon mustard

  • 2 Tbsp Worcestershire sauce

  • 2 Tbsp balsamic vinegar

  • 1 Tbsp dry mustard

  • 2 tsp minced garlic

  • 1 tsp ground ginger

  • 1 tsp dried thyme

For the Cola Glaze:

  • 1 cup brown sugar, packed

  • 2/3 cup Coca-Cola

  • 1/3 cup balsamic vinegar

  • 2 Tbsp butter

  • 1 Tbsp cornstarch

  • 1/2 tsp dry mustard

  • Salt and freshly ground black pepper, to taste
