Ingredients

  • 1 kg ripe tomatoes (any variety)

  • 2 medium brown onions

  • 2 tablespoons salt

  • 1 ½ cups (325g) caster or white sugar

  • 1 ½ cups (375 ml) white vinegar

  • 2 ½ teaspoons curry powder

  • 1 teaspoon mustard powder

  • 1 pinch cayenne pepper (adjust to taste)

  • 2 tablespoons plain (all-purpose) flour

  • ⅓ cup white vinegar, extra (for the slurry)
