My Texas Chili

Ingredients

  • 3 Tbsp bacon drippings

  • 3 lb ground sirloin or beef chuck

  • 1 large onion, chopped

  • 1 Tbsp chopped garlic

  • 3 ½ Tbsp Gebhardt chili powder

  • 1 Tbsp ground cumin

  • 1 tsp oregano

  • ½ tsp dried basil

  • Salt and black pepper, to taste

  • 1/8 tsp hot paprika (optional)

  • 1 pinch cayenne pepper (optional)

  • 2 cans (6 oz each) tomato paste

  • 1 can (14.5 oz) beef broth or stock

  • 1 can (10 oz) Rotel Original diced tomatoes & green chilies

  • 1 can (8 oz) Rotel Zesty tomato & green chili sauce (or tomato sauce)

  • 1 can (4.5 oz) chopped green chilies (optional)

  • ¾ cup water, plus more as needed

  • For Serving: Grated cheddar or Monterey Jack cheese, sour cream, chopped onions, cornbread, or tortilla chips.
