Meatloaf With A Tomato Beef Sauce
Instructions
Step 1: Prepare the Meatloaf Mixture
-
Preheat your oven to 350°F (175°C).
 -
Using your hands or a spatula, mix the ingredients until just combined. Be careful not to overmix, as this can result in a dense meatloaf.

Step 2: Shape and Initial Bake
-
Transfer the mixture to a parchment-lined baking sheet or a 9×13-inch baking dish. Gently shape it into an even loaf, about 9 inches long and 5 inches wide.
 -
Bake in the preheated oven for 1 hour.

Step 3: Prepare the Glaze
While the meatloaf bakes, make the glaze:
-
In a microwave-safe bowl or liquid measuring cup, whisk together the ⅓ cup of ketchup and the cornstarch until smooth.
 -
Whisk in the beef consommé, dried basil, and hot sauce (if using).
 -
Microwave on high for 2-3 minutes, pausing to whisk halfway through, until the sauce has thickened slightly.

Step 4: Glaze and Finish Baking
-
After the first hour of baking, carefully remove the meatloaf from the oven.
 -
Return the meatloaf to the oven, uncovered, and bake for an additional 30 minutes. The glaze will set and the internal temperature should reach 160°F.

Step 5: Rest and Serve
-
Let the meatloaf rest for at least 10 minutes before slicing. This allows the juices to redistribute, ensuring moist slices.
 -
Serve warm with your favorite sides.
