- Cook Potatoes Microwave cubed potatoes in a glass dish for 7–10 minutes until soft.
 
- Make the Base In a large pot, melt butter over medium-high heat. Whisk in flour until smooth. Gradually stir in milk. Bring to a boil, then reduce heat and simmer 5–10 minutes until slightly thickened.
 
- Add Veggies & Finish Stir in cooked potatoes and chopped onion. Simmer 5 minutes. Add sour cream and cheddar. Stir until melted and smooth. Season with salt and pepper.
