Instructions
- Preheat oven to 325°F (165°C).
 - Heat oil in a Dutch oven, season roast with salt & pepper, and sear 3–4 minutes per side.
 - Remove roast, stir carrots, potatoes, and onion into the pot.
 - Place roast on top, mix seasoning packets with broth, and pour over the roast.
 - Cover & bake for 3–4 hours until tender and falls apart easily.
 - Serve hot, spooning gravy over the meat and vegetables.
