Lemon Cream Cheese Tart
Instructions
1. Make the Crust:

Preheat your oven to 180°C (360°F).

In a medium bowl, whisk the egg with the lemon zest and sugar until combined.

In a separate bowl, whisk together the flour and baking powder (and salt, if using).

Gradually add the dry ingredients to the egg mixture, stirring until crumbly. Add the softened butter and mix until a soft dough forms.

Press the dough evenly into the bottom and up the sides of an 8-inch tart pan with a removable bottom. Set aside.
2. Prepare the Filling:

In a medium saucepan, whisk the 2 eggs and sugar together until smooth.

Add the milk, cream cheese, and fresh lemon juice, whisking to combine the cream cheese as much as possible.

Gradually whisk in the cornstarch until no lumps remain.

Place the saucepan over medium heat. Cook, stirring constantly with a whisk, until the mixture thickens and begins to bubble. Continue cooking for 1 more minute until thick and smooth. Remove from heat.
3. Assemble & Bake:

Immediately pour the warm lemon cream filling into the prepared crust. Smooth the top with a spatula.

Bake for 30-35 minutes, or until the crust is golden brown and the filling is set.

Remove the tart from the oven and place it on a wire rack to cool completely. The filling will firm up further as it cools.
4. Garnish and Serve:

Once completely cool, carefully remove the tart from the pan.

Just before serving, dust generously with powdered sugar and garnish with fresh lemon slices.
