Lemon Cream Cheese Tart

Instructions

1. Make the Crust:

  • Preheat your oven to 180°C (360°F).

  • In a medium bowl, whisk the egg with the lemon zest and sugar until combined.

  • In a separate bowl, whisk together the flour and baking powder (and salt, if using).

  • Gradually add the dry ingredients to the egg mixture, stirring until crumbly. Add the softened butter and mix until a soft dough forms.

  • Press the dough evenly into the bottom and up the sides of an 8-inch tart pan with a removable bottom. Set aside.

2. Prepare the Filling:

  • In a medium saucepan, whisk the 2 eggs and sugar together until smooth.

  • Add the milk, cream cheese, and fresh lemon juice, whisking to combine the cream cheese as much as possible.

  • Gradually whisk in the cornstarch until no lumps remain.

  • Place the saucepan over medium heat. Cook, stirring constantly with a whisk, until the mixture thickens and begins to bubble. Continue cooking for 1 more minute until thick and smooth. Remove from heat.

3. Assemble & Bake:

  • Immediately pour the warm lemon cream filling into the prepared crust. Smooth the top with a spatula.

  • Bake for 30-35 minutes, or until the crust is golden brown and the filling is set.

  • Remove the tart from the oven and place it on a wire rack to cool completely. The filling will firm up further as it cools.

4. Garnish and Serve:

  • Once completely cool, carefully remove the tart from the pan.

  • Just before serving, dust generously with powdered sugar and garnish with fresh lemon slices.

  • Slice, serve, and enjoy!
