Instructions:
- Heat olive oil in a large pot over medium-high heat. Crumble sausage into pot and cook until browned. Drain sausage on paper towels, reserving 1 Tbsp fat in pot.
 - Add onions and carrots to pot, sauté for 3 minutes. Add garlic, sauté for 1 minute.
 - Stir in beef broth, diced tomatoes, tomato sauce, Italian seasoning, salt, and pepper. Bring to a boil.
 - Return sausage to pot, cover, reduce heat to medium-low, and simmer until carrots are nearly tender, about 15 minutes.
 - Stir in tortellini and kale, cover, and cook for 7-9 minutes until tortellini is tender.
 - Serve warm, garnished with Parmesan cheese if desired.
