Preparation

Combine Ingredients: In a large bowl, combine the cooled mashed potatoes, all-purpose flour, 1/4 cup of Parmesan cheese, sour cream, chives, parsley, and sea salt. Mix until well combined.

Add Eggs: Pour in the beaten eggs and stir until the mixture is fully incorporated.
Cooking Instructions
Choose to Bake or Fry:
For Baking:

Scoop portions of the potato mixture and shape them into small balls. Place them on the prepared baking sheet.

Sprinkle the tops with the remaining 2.5 tablespoons of Parmesan cheese.

Bake for 15-20 minutes, or until the puffs are firm and golden brown.

Heat about 1-2 inches of oil in a heavy-bottomed pan over medium heat until it reaches 350°F (175°C).

Carefully drop spoonfuls of the mixture into the hot oil, frying in batches to avoid overcrowding.

Fry for 2-3 minutes, turning occasionally, until crispy and golden brown on all sides.
