I swear this recipe was sent straight from heaven!

Preparation

  1. Preheat Oven: If baking, preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. Combine Ingredients: In a large bowl, combine the cooled mashed potatoes, all-purpose flour, 1/4 cup of Parmesan cheese, sour cream, chives, parsley, and sea salt. Mix until well combined.

  3. Add Eggs: Pour in the beaten eggs and stir until the mixture is fully incorporated.

Cooking Instructions

Choose to Bake or Fry:

For Baking:

  • Scoop portions of the potato mixture and shape them into small balls. Place them on the prepared baking sheet.

  • Sprinkle the tops with the remaining 2.5 tablespoons of Parmesan cheese.

  • Bake for 15-20 minutes, or until the puffs are firm and golden brown.

For Frying:

  • Heat about 1-2 inches of oil in a heavy-bottomed pan over medium heat until it reaches 350°F (175°C).

  • Carefully drop spoonfuls of the mixture into the hot oil, frying in batches to avoid overcrowding.

  • Fry for 2-3 minutes, turning occasionally, until crispy and golden brown on all sides.

  • Remove with a slotted spoon and drain on a plate lined with paper towels.

Serving

Serve the potato puffs warm with your favorite dipping sauce, such as sour cream, ranch, or marinara. Enjoy
