Step 1: Make the Dough

  1. Proof the Yeast: In the bowl of a stand mixer or a large mixing bowl, combine the warm water, yeast, and sugar. Let it sit for 5-10 minutes until it becomes frothy and bubbly.

  2. Mix the Dough: Add the flour, 2 tablespoons of olive oil, and salt to the yeast mixture. Stir with a wooden spoon or a dough hook on low speed until a shaggy dough forms.

  3. Knead: If using a stand mixer, knead with the dough hook for 5-7 minutes on medium speed. Alternatively, turn the dough onto a floured surface and knead by hand for 7-10 minutes. The dough is ready when it’s smooth, elastic, and slightly tacky.

  4. First Rise: Place the dough in a lightly oiled bowl, turning it once to coat. Cover the bowl with a clean kitchen towel or plastic wrap and let it rise in a warm, draft-free spot for 1-2 hours, or until doubled in size.

Step 2: Prepare the Sauce
While the dough is rising, make the sauce. In a small saucepan, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and cook for just 30 seconds until fragrant. Stir in the crushed tomatoes, oregano, salt, and sugar. Reduce the heat to low and simmer for 10-15 minutes, allowing the flavors to meld. Remove from heat and set aside to cool.

Step 3: Assemble the Pizza

  1. Preheat Oven & Pan: Place a rack in the center of your oven and preheat to 450°F (230°C). While it heats, generously coat a 12-inch cast-iron skillet or round cake pan with about 1-2 tablespoons of olive oil.

  2. Shape the Crust: Once the dough has doubled, punch it down to release the air. Transfer it to the oiled skillet. Using your fingertips, press and stretch the dough evenly across the bottom and slightly up the sides of the pan. If the dough springs back, let it rest for 5 minutes before continuing.

  3. Add Toppings: Spread the cooled tomato sauce evenly over the dough, leaving a small border around the edge. Sprinkle with the shredded mozzarella, followed by the grated Parmesan. Arrange the pepperoni slices and any optional toppings (like red onion) on top.

Step 4: Bake to Perfection

  1. Bake: Place the skillet in the preheated oven and bake for 18-22 minutes, or until the crust is deep golden brown and the cheese is bubbly and slightly spotted.

  2. Cool: Carefully remove the pizza from the oven. Let it cool in the pan for 5 minutes. This allows the cheese to set slightly, making it easier to slice.

Step 5: Serve
Run a spatula around the edge of the pan to loosen the pizza. Slice it into wedges and serve immediately. Enjoy with a sprinkle of red pepper flakes if you like a little heat
