Step 1: Activate the Yeast & Make the Dough

In a small bowl, dissolve the sugar in ½ cup of the warm water. Sprinkle the active dry yeast over the top and gently stir. Let it sit for 5-10 minutes until it becomes frothy.

In a large mixing bowl, whisk together 2 ½ cups of the all-purpose flour, cornmeal, and salt.

Create a well in the center of the dry ingredients. Pour in the yeast mixture and the remaining ½ cup of warm water. Stir with a wooden spoon until a shaggy dough forms.

Turn the dough out onto a floured surface, using the remaining ½ cup of flour as needed to prevent sticking. Knead for 8-12 minutes until the dough is smooth and elastic.

Place the dough in a lightly oiled large bowl, turning it once to coat. Cover the bowl with plastic wrap or a damp kitchen towel and let it rise in a warm place for 1-1.5 hours, or until doubled in size.
Step 2: Prepare the Filling & Preheat Oven

While the dough rises, combine all the filling ingredients in a large bowl: mozzarella, Parmesan, cooked sausage, pepperoni, onion, bell pepper, oregano, and garlic. Mix thoroughly and set aside.

Preheat your oven to 450°F (230°C). Position a rack on the lowest level.

Lightly grease a 9×2 or 10×2-inch deep dish pizza pan or a well-seasoned cast-iron skillet.

Once risen, punch down the dough and divide it into two portions, one slightly larger than the other (about 60/40).

On a floured surface, roll and press the larger portion of dough into a circle large enough to cover the bottom and all the way up the sides of the pan.

Par-bake the crust: Place the dough-lined pan in the preheated oven and bake for 4 minutes. This prevents a soggy bottom.

Add the filling: Remove the pan from the oven. Spread the cheese and meat filling mixture evenly over the par-baked crust.

Roll out the second, smaller portion of dough to form the top crust. Carefully place it over the filling. Crimp and seal the edges tightly with the bottom crust. Trim any excess dough.

Crucial step: Use a sharp knife to cut a small slit or an “X” in the center of the top crust. This allows steam to escape during baking.
Step 4: Bake and Serve

Place the pizza on the bottom rack of the oven and bake for 45 minutes, or until the crust is deeply golden brown.

Carefully remove the pizza from the oven and let it cool in the pan on a wire rack for at least 10-15 minutes. This resting time allows the molten cheese to set, making it easier to slice.
