HomeCountry Ranch Green Beans & Potatoes with Bacon

Instructions

  1. Crisp the Bacon: In a large skillet over medium heat, cook the chopped bacon until crispy, about 5-7 minutes. Use a slotted spoon to remove the bacon to a paper towel-lined plate. Leave the delicious bacon drippings in the pan.

  2. Cook the Potatoes: Add the halved baby potatoes to the skillet with the bacon fat. Season with a pinch of salt and pepper. Cook for about 10 minutes, stirring occasionally, until they begin to turn golden brown and are partially tender.

  3. Sauté the Aromatics & Green Beans: Add the diced onion, minced garlic, green beans, salt, pepper, and smoked paprika to the skillet. Stir everything to combine and coat in the fat.

  4. Steam to Tenderness: Cover the skillet with a lid and cook for 8-10 minutes, stirring once halfway through, until the green beans are bright green and crisp-tender and the potatoes are easily pierced with a fork. If the potatoes need more time, add a tablespoon of water and continue cooking covered for another few minutes.

  5. Make the Dressing: While the veggies cook, whisk together the sour cream, mayonnaise, ranch seasoning, and milk in a small bowl until smooth.

  6. Combine & Serve: Once the vegetables are cooked, remove the skillet from the heat. Add the crispy bacon back into the skillet. Pour the creamy ranch dressing over everything and toss gently until evenly coated. Taste and adjust seasoning if needed. Garnish with fresh parsley or chives and serve immediately!

Chef’s Notes & Pro Tips

  • For Larger Potatoes: If using full-sized potatoes cut into chunks, parboiling them for 5-7 minutes before adding to the skillet will ensure they cook through without burning the other ingredients.

  • Add Some Crunch: Top with toasted slivered almonds, crispy fried onions, or buttery breadcrumbs for a delightful textural contrast.

  • Meal Prep Magic: You can cook the bacon and vegetable mixture ahead of time. Store separately from the dressing. Reheat the veggies in a skillet and stir in the dressing just before serving.

Delicious Variations

  • Cheesy Ranch: Turn it into a casserole! Transfer the mixed dish to a baking dish, top with ½ cup of shredded cheddar cheese, and broil for 2-3 minutes until bubbly.

  • Spicy Southwest: Add 1 tsp of cumin and ¼ tsp of chili powder with the paprika. Stir in a diced jalapeño (seeds removed for less heat) with the onions.

  • Lemon-Herb: Brighten it up! Swap the ranch dressing for a mix of 2 tbsp olive oil, the juice of half a lemon, and 1 tbsp of fresh chopped dill.

  • Make it a Meal: Stir in 2 cups of shredded rotisserie chicken or diced cooked sausage to transform this side into a hearty main course.

  • Maple-Glazed: For a sweet and savory twist, drizzle with 1 tablespoon of maple syrup just before serving.

Enjoy this taste of home-style comfort!
