Hands down, my favorite appetizer of all time!

Instructions:

  1. Prep the Oven & Filling: Preheat your oven to 350°F (175°C). In a medium bowl, combine the softened cream cheese, shredded pepper jack, corn, and beaten egg. Mix until the filling is smooth and fully incorporated.

  2. Assemble the Bites: Arrange the Tostitos Scoops in a single layer on a baking sheet lined with parchment paper. Carefully spoon the cheesy corn mixture into each chip, being careful not to overfill them.

  3. Bake to Perfection: Bake for 10–12 minutes, or until the cheese is melted and bubbly and the edges of the chips are a light golden brown.

  4. Serve: Allow the bites to cool for a few minutes before serving warm. Enjoy!
