Georgia Cracker Salad

Instructions:

  1. In a large bowl, gently combine the diced tomato, scallions, and chopped hard-boiled eggs.

  2. Fold in the mayonnaise (or mayonnaise-yogurt mixture) until everything is evenly coated. Season generously with salt and pepper.

  3. Just before serving, gently fold in the crushed crackers. This preserves their signature crunch.

  4. Serve immediately for the best texture, or chill briefly in the refrigerator until ready to serve.
