- Prep the Potatoes Use thick, cooled mashed potatoes. If making fresh, boil, mash, and cool before mixing.
- Mix the Dough Combine all ingredients in a bowl. Mix gently until smooth and firm enough to shape.
- Shape the Puffs Scoop into small balls or ovals. For extra crunch, roll in breadcrumbs or panko.
- Bake or Fry
- To Bake: Preheat oven to 400°F (200°C). Place on greased or lined sheet. Brush tops with butter or oil. Bake 20â25 minutes, flipping halfway.
- To Fry: Heat oil to 350°F (175°C). Fry in batches for 3â4 minutes until golden. Drain on paper towels.
- Serve Warm Pair with dips like sour cream, garlic aioli, spicy mayo, or cheese sauce. Sprinkle herbs or extra cheese on top.
