Crispy Bacon-Wrapped Potato Bites

Preheat and Prepare.
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup. -
Wrap and Secure.
Tightly wrap each seasoned potato with a half-slice of bacon. Secure the end of the bacon with a toothpick and place the bite seam-side down on the prepared baking sheet. Leave a little space between each one for optimal crisping. -
Bake to Perfection.
Bake for 35-40 minutes, flipping each bite halfway through the cooking time. They are ready when the bacon is deeply golden and crispy, and the potatoes are fork-tender. -
Serve and Enjoy!
Allow the bites to cool for a few minutes before serving (they will be very hot!). Arrange them on a platter with dipping sauces like cool ranch, tangy sour cream, or spicy barbecue sauce.

Potato Prep: For even cooking, try to select potatoes that are all roughly the same size. If your potatoes are on the larger side, you can halve them before seasoning.

Air Fryer Method: These work beautifully in an air fryer! Cook at 375°F (190°C) for 15-20 minutes, shaking the basket halfway through.
