Creamy Cucumber Shrimp Salad

Ingredients

For the Salad:

  • 1 lb (450 g) cooked shrimp, peeled, deveined, and chilled
  • 1 large cucumber, thinly sliced (peeled if preferred)
  • ½ small red onion, very thinly sliced
  • 1 tbsp fresh dill, chopped (or 1 tsp dried dill)
  • 1 tbsp fresh parsley, chopped (optional)

For the Creamy Dressing:

  • ½ cup sour cream (or Greek yogurt for lighter version)
  • 2 tbsp mayonnaise
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • Salt and pepper, to taste
