#### 2. **Brown the Sausage**
* In a large skillet or sauté pan, heat olive oil over medium-high heat.
* Add sliced sausage and cook until browned on both sides, about 4–5 minutes. Remove and set aside.
* In the same skillet, add onions and bell peppers. Sauté until softened, about 3–4 minutes.
* Add garlic and Cajun seasoning, and cook for 1 more minute, stirring constantly.
#### 4. **Make the Cream Sauce**
* Lower heat to medium. Add heavy cream and chicken broth (or reserved pasta water). Stir well.
* Bring to a gentle simmer and let it cook for 3–5 minutes until slightly thickened.
* Stir in Parmesan cheese until melted and smooth.
#### 5. **Combine Everything**
* Return the sausage to the pan.
* Add cooked pasta and toss to coat everything in the creamy Cajun sauce.
* If needed, add a splash of pasta water to loosen the sauce.
#### 6. **Serve**
* Garnish with chopped parsley and extra Parmesan.
* Add red pepper flakes if you like it spicier.
—
* **Make it lighter:** Substitute half-and-half or evaporated milk for heavy cream.
* **Add veggies:** Toss in spinach, mushrooms, or zucchini for a nutrient boost.
* **Use shrimp or chicken:** Easily swap the sausage for your favorite protein.
* **Make it gluten-free:** Use gluten-free pasta — the sauce is naturally gluten-free.
