1. Prep the Pan & Oven
- Preheat oven to 350°F (175°C).
- Grease and flour a standard loaf pan.
- Beat softened butter and cream cheese until smooth and creamy.
3. Add Sugar & Vanilla
- Gradually add sugar and vanilla.
- Beat until light and fluffy.
4. Mix in Eggs
- Add eggs one at a time, mixing well after each.
5. Combine Dry Ingredients
- In a separate bowl, whisk flour, baking powder, and salt.
- Add to wet mixture on low speed until just combined — don’t overmix.
6. Fold in Cranberries & Pecans
- Gently stir in cranberries and pecans with a spatula.
7. Bake
- Pour batter into prepared pan and smooth the top.
- Bake for 60–70 minutes, until a toothpick comes out clean.
- Cool in pan before slicing.
