- Brown the Beef Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned. Season with salt and pepper.
- Build the Base Stir in conchas, garlic, tomatoes, broth, tomato sauce, and cumin. Simmer on low for 20 minutes, stirring occasionally.
- Add Veggies & Herbs Mix in oregano, carrots, zucchini (if using), and bay leaves. Simmer another 15 minutes until pasta is tender.
- Finish & Serve Add chopped onion and cook 5 more minutes until softened. Serve hot over white rice.
đœ Notes & Variations
- Swap conchas for ditalini or acini di pepe if needed.
- Add heat with jalapeños or red pepper flakes.
- Toss in extra veggies like bell peppers or corn.
- Adjust seasoning to taste.
