Cheesy Ground Beef and Rice Casserole

Instructions

1. Prep and Preheat:

  • Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.

2. Cook the Beef and Aromatics:

  • In a large skillet over medium heat, cook the ground beef, onion, and garlic until the beef is browned and the onions are softened. Drain off any excess grease.

3. Combine the Casserole Base:

  • In a large mixing bowl, combine the cooked beef mixture, uncooked rice, beef broth, both cans of soup, corn, paprika, dried parsley, salt, pepper, and 1 cup of the shredded cheddar cheese. Mix thoroughly until everything is well incorporated.

4. Assemble for Baking:

  • Pour the mixture into the prepared baking dish, spreading it into an even layer.

  • Cover the dish tightly with aluminum foil.

5. Bake:

  • Bake Covered: Place in the preheated oven and bake for 60 minutes.

  • Add Cheese and Finish Baking: Carefully remove the foil. Gently stir the casserole, then sprinkle the remaining 1 cup of cheddar cheese evenly over the top.

  • Return the dish to the oven, uncovered, and bake for another 10-15 minutes, or until the cheese is completely melted and bubbly.

6. Rest and Serve:

  • Let the casserole stand for 5-10 minutes before serving. This allows the sauce to thicken and makes it easier to scoop.

  • Garnish with your chosen toppings and enjoy!

Chef’s Notes & Variations

  • Protein Swap: Ground turkey or chicken are excellent leaner alternatives to the beef.

  • Boost the Veggies: Feel free to add sautéed diced bell peppers, a drained can of Rotel tomatoes, or a can of chopped green chilies for a flavor boost.

  • Spice It Up: For a Tex-Mex twist, add 1-2 tablespoons of taco seasoning to the beef as it cooks.

  • Make Ahead: You can assemble the casserole up to a day in advance. Keep it covered in the refrigerator, then add 5-10 minutes to the initial baking time since it will be going into the oven cold.
