  1. Prep: Preheat oven to 425°F (220°C). Remove any tough outer leaves from the cabbage and trim the stem, but leave it intact. Slice the cabbage into 1-inch thick rounds.

  2. Make Seasoning: In a small bowl, combine olive oil, garlic, onion powder, thyme, 2 tablespoons of the Parmesan cheese, salt, and pepper.

  3. Season Cabbage: Arrange cabbage steaks in a single layer on a parchment-lined baking sheet. Brush both sides generously with the olive oil mixture.

  4. Bake: Bake for 20 minutes, or until the edges are tender and golden brown.

  5. Add Cheese: Remove from oven. Sprinkle mozzarella and the remaining Parmesan cheese over the top.

  6. Broil: Return to oven and bake for another 3-5 minutes, or until the cheese is melted, bubbly, and lightly golden. Serve immediately.
