Cheeseburger quesadillas with burger sauce

Instructions

1. Prepare the Burger Sauce:
In a small bowl, combine the mayonnaise, ketchup, mustard, pickle relish, garlic powder, and onion powder. Mix well until smooth. Season with a pinch of salt and pepper. Refrigerate until ready to use to allow the flavors to meld.

2. Cook the Beef Filling:
In a large skillet over medium-high heat, cook the ground beef and diced onion together, breaking up the meat with a spoon. Cook until the beef is browned and the onions are soft, about 7-10 minutes. Season generously with salt, pepper, and garlic powder. Drain off any excess grease and set aside to cool slightly.

3. Assemble the Quesadillas:
Lay the tortillas on a clean work surface. Spread a tablespoon of the burger sauce over one half of each tortilla. On the sauced half, sprinkle a layer of shredded cheese, followed by a scoop of the beef mixture, a few diced pickles (if using), and another generous sprinkle of cheese. Fold the bare half of the tortilla over the filling to create a half-moon shape.

4. Cook to Golden Perfection:
Wipe out the skillet used for the beef and place it over medium heat. Add a ½ tablespoon of butter. Once melted and sizzling, carefully place one assembled quesadilla in the skillet. Cook for 2-3 minutes per side, pressing down gently with a spatula, until the tortilla is golden brown and crisp and the cheese inside is fully melted.
Repeat with the remaining quesadillas, adding more butter to the pan as needed.

5. Serve and Enjoy:
Transfer the cooked quesadillas to a cutting board and let them rest for a minute before slicing into wedges. Serve immediately with extra burger sauce for dipping and a side of shredded lettuce and diced tomatoes for that authentic burger experience.
