Ingredients

  • 4 large eggs

  • 1 lb ground breakfast sausage

  • 2 cups shredded cheddar cheese (or a cheddar blend)

  • 1–2 tbsp all-purpose flour

  • 1 – 1½ cups milk

  • Salt and black pepper, to taste

  • Optional toppings: chopped green onions, a sprinkle of red pepper flakes, or a dash of hot sauce
