Instructions

  1. Prep the Oven and Skillet. Preheat your oven to 375°F (190°C). Place the 8 tablespoons of butter into a 10-inch cast iron skillet and put the skillet in the oven to melt the butter as it preheats. Keep a close eye on it so it doesn’t burn.

  2. Make the Blackberry Filling. While the butter melts, combine the blackberries, ½ cup granulated sugar, 2 tablespoons flour, vanilla extract, and cinnamon in a medium bowl. Gently stir until the blackberries are evenly coated. Set aside.

  3. Prepare the Cobbler Batter. In a separate large mixing bowl, whisk together the 1 ½ cups flour, brown sugar, baking powder, and salt. Pour in the milk and stir until just combined, forming a thick batter.

  4. Assemble the Cobbler.

    • Carefully remove the hot skillet with the melted butter from the oven.

    • Immediately pour the prepared batter evenly over the melted butter. Do not stir.

    • Spoon the blackberry filling and any juices evenly over the top of the batter. Do not stir.

  5. Bake. Place the skillet in the preheated oven and bake for 40-45 minutes, or until the top is golden brown and the filling is bubbly.

  6. Serve. Let the cobbler cool for about 10 minutes before serving. It is best enjoyed warm, ideally with a scoop of vanilla ice cream or a dollop of whipped cream.
