Apple Cinnamon Cake

Instructions:

  1. Prepare the Oven and Apples: Preheat your oven to 180°C (350°F). Grease and flour a 9-inch loaf pan or round cake tin. In a small bowl, toss the diced apples with 2 teaspoons of the cinnamon until evenly coated. Set aside.

  2. Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and sugar together with an electric mixer (or by hand) for 2-3 minutes, until the mixture is pale, light, and fluffy.

  3. Add Eggs: Add the eggs one at a time, beating well after each addition until fully incorporated. Scrape down the sides of the bowl as needed.

  4. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, the remaining 3 teaspoons of cinnamon, and the salt.

  5. Form the Batter: Gradually add the dry ingredients to the wet ingredients, mixing on low speed only until just combined. Be careful not to overmix.

  6. Fold in Apples: Gently fold the cinnamon-coated apple pieces into the batter until they are evenly distributed.

  7. Bake: Pour the batter into the prepared tin and spread it evenly. Bake for 45-50 minutes, or until the cake is golden brown and a skewer inserted into the center comes out clean.

  8. Cool and Serve: Let the cake cool in the tin for 15 minutes before transferring it to a wire rack to cool completely. Slice and serve.
