Apple and Carrot Zucchini Bread

This moist, spiced loaf is packed with fresh apples, carrots, and zucchini, all topped with a tangy orange cream cheese frosting. It’s the perfect blend of wholesome and decadent.

Ingredients

For the Bread:

  • 2 cups all-purpose flour

  • 1 tsp salt

  • 2 ½ tsp baking powder

  • ¾ tsp baking soda

  • 1 tsp ground cinnamon

  • ⅛ tsp ground cloves

  • ⅛ tsp ground nutmeg

  • 1 cup (2 sticks) unsalted butter, melted

  • 2 cups granulated sugar

  • 3 large eggs, at room temperature

  • ¼ cup fresh orange juice

  • 1 tbsp vanilla extract

  • 1 cup shredded zucchini, excess liquid squeezed out

  • 2 cups shredded carrots

  • 1 cup diced apple chunks

  • ½ cup chopped pecans

For the Orange Cream Cheese Frosting:

  • ½ cup (4 oz) cream cheese, softened

  • ¼ cup (½ stick) unsalted butter, softened

  • 2 – 3 cups confectioners’ sugar

  • 1 – 3 tbsp fresh orange juice
