Apple Almond Tart
Ingredients
Sweet shortcrust pastry, Pierre Hermé style
250 g flour
75 g icing sugar
140 g butter
25 g almond powder
2 g salt
1 egg
Almond cream
100 g butter
100 g caster sugar
100 g almond powder
2 eggs
1 tbsp cornstarch (cornflour)
Filling
4 to 5 apples (depending on their size)
15 g vanilla sugar or brown sugar
20 g cold butter, cut into small pieces
