1. Preheat Oven
- Set oven to 375°F (190°C).
- Heat olive oil in a skillet.
- Cook ground beef until browned.
- Remove with slotted spoon, leaving drippings.
3. Sauté Aromatics
- In the same skillet, cook onion and garlic until translucent (3–4 min).
4. Add Fall Veggies
- Stir in potatoes, carrots, and celery.
- Cook for 5 minutes to soften slightly.
5. Combine & Season
- Return beef to skillet.
- Add corn, tomatoes (with juice), and broth.
- Season with salt, pepper, thyme, and rosemary.
- Stir to combine.
6. Transfer to Baking Dish
- Grease a 9×13-inch dish.
- Pour in beef and veggie mixture.
7. Bake Covered
- Cover with foil.
- Bake for 30 minutes to meld flavors.
8. Add Cheese & Finish
- Remove foil.
- Sprinkle cheddar on top.
- Bake uncovered for 10–15 minutes, until bubbly and golden.
9. Rest & Serve
- Let rest for a few minutes before serving.
- Dish out generous portions and enjoy!
