Quick Oat Bread for Breakfast

This moist and hearty bread is perfect for a fast, healthy breakfast. It’s naturally sweetened with pumpkin and your choice of add-ins.

Ingredients

  • Dry Ingredients:

    • 1 cup rolled oats

    • 1 tsp baking powder

    • 1 tsp cinnamon (optional)

    • A pinch of salt

  • Wet Ingredients:

    • 1 cup (approx. 200-250 ml) slightly warm water

    • 400g pumpkin, peeled and grated (about 1/2 a medium pumpkin)

    • 1 tbsp sweetener of your choice, like honey or maple syrup (optional)

    • 1 tbsp oil (e.g., vegetable, coconut)

  • Add-ins (Optional but recommended):

    • A handful of dried apricots, chopped

    • 1 tbsp chia seeds

    • A mix of chopped nuts, seeds, and dried fruits (e.g., sunflower seeds, walnuts, raisins)

    • 1 tbsp sesame seeds
