½ cup green bell pepper, diced

½ cup celery, diced

½ cup mayonnaise

½ cup milk

3 large eggs

2 tsp fresh lemon juice

¼ tsp cayenne pepper (adjust to taste)

Prep & Preheat: Preheat your oven to 375°F (190°C). Place the unbaked pie crust into a 9-inch pie dish and set it on a baking sheet for easy handling.

Sauté the Aromatics: In a skillet over medium heat, melt the butter. Add the chopped onion, bell pepper, celery, and garlic. Sauté for 5-7 minutes, until the vegetables are softened and fragrant. Remove from heat.

Create the Custard: In a medium mixing bowl, whisk together the mayonnaise, milk, eggs, lemon juice, Worcestershire sauce, salt, black pepper, and cayenne pepper until the mixture is completely smooth and well-combined.

Add the Cheesy Topping: Sprinkle the shredded sharp Cheddar cheese evenly over the entire surface.

Bake to Perfection: Bake uncovered for 40-45 minutes, or until the center is set, the top is a beautiful golden brown, and the edges of the crust are crisp.
