Mini Beef Wellingtons

An impressive and delicious appetizer or main course, these individual Wellingtons feature seared beef tenderloin and a rich mushroom duxelles, all wrapped in a crisp, golden puff pastry.

Ingredients

  • 1 lb (450g) beef tenderloin, cut into 4 equal pieces

  • 1 sheet puff pastry, thawed

  • 8 oz (225g) cremini or button mushrooms, very finely chopped

  • 2 tablespoons unsalted butter

  • 1/4 cup heavy cream (optional, for a richer duxelles)

  • 1 tablespoon Dijon mustard

  • 1 large egg, beaten (for egg wash)

  • Salt and freshly ground black pepper

  • Olive oil
