Refrigerator Cucumber Salad by Barbie Seidl

This cool, crisp, and sweetly tangy salad was the Grand Prize winner of our “Sure Thing” Potluck Recipe Contest. Submitted by Barbie Seidl, it was a beloved recipe from her father. It’s incredibly simple to make and gets even better as it marinates in the fridge.

  • 6 cups cucumbers, thinly sliced

  • 1 cup onion, thinly sliced

  • 1 ¾ cups granulated sugar

  • 1 cup white vinegar

  • 2 tablespoons salt, or less to taste
