Sweet Potato Skins with Spinach, Mushroom, and Feta
These crispy sweet potato skins are filled with sautéed spinach, mushrooms, and crumbled feta, then topped with melted mozzarella and served with a creamy garlic Parmesan dip.
Ingredients
For the Sweet Potato Skins:
- 4 medium sweet potatoes
 - 1 tablespoon olive oil
 - Salt and pepper to taste
 
For the Filling:
- 1 tablespoon olive oil or butter
 - 1 small yellow onion, finely diced
 - 2 cloves garlic, minced
 - 2 cups baby spinach, chopped
 - 1½ cups mushrooms, sliced
 - ½ teaspoon dried thyme
 - ½ teaspoon dried rosemary
 - ½ teaspoon sea salt
 - ¼ teaspoon black pepper
 - ½ cup crumbled feta cheese
 
For the Topping:
- ¾ cup shredded mozzarella or Italian blend cheese
 - 1 tablespoon fresh basil or parsley, chopped
 
For the Garlic Parmesan Dip:
- ½ cup plain Greek yogurt or sour cream
 - ¼ cup mayonnaise
 - ¼ cup grated Parmesan cheese
 - 1 clove garlic, minced
 - 1 teaspoon lemon juice
 - Salt and pepper to taste
